How many ways do we have to make raviolis? Raviolis are a great dish as you can really fill them with anything you want: meat, fish, vegetables, fruits… And today we’ll show you one recipe straight out of the sea: A great recipe by the fisherman of Palamós!
This recipe is great because you can use the fish “leftovers” that you may have in your fridge. In this case, the recipe was explained by a true fisherman, that used the leftovers he had on the boat (of course, we all wish we had fish right out of the sea!)
The unique combination of the filling (fish and vegetables) and the sauce (tomatoes and prawns!), makes for a magnificent tasting of sea flavours!
Once you have chopped and boiled all the ingredients for the filling, it’s time to blend them (just for a few seconds, we do want to distinguish what’s in the filling!)
When you have everything ready, it’s time to take the dough out. We used a very fine dough, so that the fish and the sauce will be the ones taking the stage!) and start stuffing your raviolis, shaping them anyway you like, be creative!.
The key here is, how do you boil them? or do you fry them? What’s the best way to cook this raviolis, without the risk of spilling the filling on the process? We proposed to fry-boil them, first we browned them on a bit of oil, and we then covered the frying pan with wet parchement paper; the result was irresistable!
