This recipe is about marinating, to give a simple chicken breast a new and surprising flavour. We’ll need quite a few ingredients, both for the marinating and the salad-tomato relish… and of course, the chicken!
Moist Chicken on Arugula with Herb Sauce and Tomato Relish
The secret of this recipe is time. When we are done preparing the chicken, we will need to let it marinate for a few hours (6 hours, or refrigerate overnight), until we grill it.
In a bowl, combine buttermilk or yogurt with herbs and spices (dry thyme, basil, orgeno; garlic, salt, pepper and mostard) and add the chicken and put in the fridge.
When you’re ready to cook it, shake off the excess marinade and toss the chicken on a grill pan. Don’t rush, the chicken has to be cooked through, cover with wet over paper to maintain moist till it is done
When it’s done, let it rest and cover with foil for 15 minutes… that way the juices will remain in the meat when you slice it! Time now to add our herb sauce (a combination of yogurt and Dijon mustard with fresh basil, dill and parsley) and the chopped tomatoes, and you’ll have a nice, healthy dish! Bon Appétit!
