Veggie Stew with ravioli
Today we share a great comfort food recipe: eventhough it’s not too cold these days, today we offer you a recipe that combines the comfort feeling of a vegetable soup with a bit of pasta, but not just flat pasta, we are using ricotta tortellini!
The combination of vegetables and pasta makes this soup a hearty one course meal, perfect to take to the office. You will feel full and at ease after eating this!
This stew adds a new twitst to the general vegetable soup. It’s easy to find a good minestrone, but not that easy to find something you can put on your tupperware that combines that sense of well-being and at the same time of “something old” that maybe reminds you of a dish that your grandma used to prepare, that puts your mind at ease while eating it, with a little sparkle of “something new”.
We prepared this dish a few weeks ago, and looking at these images I can still picture the mouth-watering smell of it, and the comforting feeling I sensed that evening with this very special Minestrone.
