Today I am proposing some refreshing and delicious salads, perfect for summer! We will talk about the Ceasar Salad, and one with roasted cherry tomatoes and cheese!
We will start with the Ceasar Salad:
Ingredients (Serves 4)
The salad
4 heads romaine lettuce
Freshly grated parmesan cheese
4 bread slices
2 chicken breasts
The dressing
½ cup olive oil 2 cloves garlic, minced
2 Tbsp anchovy paste
2 Tbsp lemon juice
2 tsp Worcestershire sauce
1 Tbsp mustard
2 Tbsp mayonnaise
Salt and freshly ground black pepper
Aromatic herbs (optional)
Preparation:
Dressing
Add all the ingredients, except the olive oil, to a food processor. Turn on and pulse until smooth and creamy. While the food processor is on, slowly drizzle the oil. Do not pour the oil in too quickly as that can break the emulsification process. Just drizzle it slowly until all the oil has been added.
Chicken
Cube chicken breast (aprox 1.5 cm thick); soak in seasoned milk for half an hour. Stir fry until golden and cooked through. Set aside.
Lettuce
Wash carefully, making sure you get rid of every possible earth grain or bugs. Pat dry with kitchen paper and keep it in the fridge. Cut into rather large pieces using your hands or a plastic knife.
Croutons
Spread baguette slices over a baking sheet lined with parchment paper and brush with olive oil. Broil for a couple of minutes until the tops are lightly browned. Remove and let cool
For our Roasted cherry tomatoes with cheese salad, we will need:
Ingredients (Serves 4)
½ kg cherry tomatoes (a mix colours and types, some on the vine)
100 g goat or sheep cheese, crumbled or finely chopped
Oregano, a handful
Salt and pepper, to taste
Oil and balsamic vinegar
A pinch of sugar
Preparation
0. Preheat oven to 200C/180C fan/gas 6.
1. Put the cherry tomatoes on a baking sheet. Drizzle over the olive oil and balsamic vinegar. Season with herbs, sugar, salt and pepper, then toss to mix flavours.
2. Bake for 15 minutes until the tomatoes are cooked through.
3. Serve topped with the cheese.
This salad can be served over short pasta, or on pizzas, delicious! Even if you have a handful leftover, I assure you, it won’t last long in your fridge!
